Stuffed Zucchini - ready to bake

Stuffed Zucchini ready to bake for tomorrows lunch!

Ingredients:(as requested)
1 big zucchini
1 small red paprika(seeded and sliced in small square pcs.)
140 g diced bacon (cooked and drained)
2 tb bread crumbs
1 egg
2tb margarine
1 scallion
pepper to taste
Parsley
parmesan cheese

Instructions:
Scrub zucchini and cut in half lengthwise. Scoop out and reserve pulp, leaving shells 1/4-inch thick. 2. Drop shells into boiling water and boil for 5 minutes. 3. Chop pulp and saute in margarine.4, Add scallion (or green onions) and remove from heat.5.Beat eggs with parsley, paprika, diced bacon and pepper to taste(no salt needed as for bacon has salty taste already). 5. Add egg mixture and fresh bread crumbs to pulp mixture. Spoon into zucchini shells which have been drained. Top with parmesan cheese.6. Place into a baking dish which has been greased with margarine. Add 1/2 inch of water and bake uncovered, in preheated 350-degree oven for about 30 minutes. Bonne appetit!
